Champagne Castelnau Brut Réserve
Champagne de Castelnau was founded in 1916 in Epernay and is named after General de Castelnau, "Le Sauveur de Nancy" (the Savior of Nancy) who led one of the battles of Champagne during World War I, Since taht time, the house has been known for its champagne mainly in France, but has not gained international recognition for both its quality and distinctive preparation. The house harvests grapes from more than 900HA, and uses only the first press "Cuvée". What makes Champagne Castelnau truly unique is the aging of the wine which is 6 years on the lees!
Brut Réserve has a complex and rich taste mixture. It is completed with 20% of the "vin de reserve" and then 6 years aging, giving the champagne a beautiful straw-yellow color with green undertones. This wine has an outstanding complexity and aroma which is unusual to find in a non-vintage brut.
The dominant and toasted Chardonnay brings delicious spices and herbs such as thyme and laurel, with a slight hint of tobacco and dried flowers.
On the palate you find the same toasted notes with a slight touch of honey, sweetness of stonefruit such as peach and apricot and smaller notes of gingerbread, almonds and hazelnut. The Pinot Noir grapes gives it a boost and delicious freshness.
"A Vintage soul in a Brut non-vintage body" is an accurate definition of this harmonious and complex Champagne.
Food and wine pairing
Perfect with canapés such as scampi tempura or scallop croquettes; or if with a meal ten with sole or lightly sauteed veal sweetbreads.
